But how do you know if a product is fresh?
Reading the label is the first step in recognizing the freshness and quality of the oil. The origin of the oil is a characteristic to observe, which says a lot about the quality of the oil and the distance it travels, and consequently the freshness. Checking the production date and expiry date of the oil is essential. Prefer more recently produced oils and favor products from the new vintage for an oil with the best possible organoleptic characteristics. A very short expiration of the oil marks a qualitatively better oil. Last but not least, the presence of the DOP label is a very important support, as it is synonymous with certain and precise origin."
