The Casaliva is a high plant, with intense green leaves, its fruits born in the middle of spring and ripen (mature) between the end of October and the beginning of November. The olive harvest takes place between the end of October and late December.
The best oil is obtained in this period, the olives express the maximum in organoleptic substances and the fruity is tending to green. Late harvests, on the other hand, express a more mature fruitiness and a shorter life for the oil.
