The difference between filtered and unfiltered extra virgin olive oil lies in the fact that the latter contains some solid substances in suspension and small quantities of water coming from the olives processing, due to the fact that it has not pass through the filtration process. For this reason, unfiltered oils have a cloudy (not limpid) appearance, unlike filtered oils, which are more translucent and shiny.
